This coffee was grown by Jairo Arcila at his farm Santa Monica. The cherries are carefully hand-picked, selecting only the ripest, and then hand sorted to remove any inconsistencies. Cherries were sundried on raised beds, in temperature controlled conditions, drying to 10.9% moisture content. 

This microlot is 100% Chiroso, which is a natural mutation of the bourbon varietal. Chiroso has only recently been discovered and has become extremely popular over the last 5 years, showcasing lots of complexity, florals, and jammy red fruits.

 We find this coffee is super versatile and can handle plenty of roast development, so we have roasted it with slightly more development to exaggerate its texture and heavy fruits. Expect a sweet, jammy, and winey cup with plenty of cherries and toffee apple.
