Juicy and Sweet. Bright Fruits and Lovely Acidity, with a Creamy and Chocolatey Finish.

This coffee was grown by Jairo Arcila at his farm Santa Monica. The cherries are carefully hand-picked, selecting only the ripest, and then hand sorted to remove any inconsistencies. Cherries are then fermented in grainpro bags, and sundried on raised beds, in temperature controlled conditions, drying to 11.1% moisture content. 

This microlot is 100% Pink Bourbon, which is currently under research to determine its origin. Showcasing loads of sweet and bright fruits, with lots of complexity, and a sweet chocolatey finish.

We find this coffee is perfect for roasting lightly to showcase its brightness, so we have roasted it fairly quickly to exaggerate its fruit acidity. Expect a citrusy and tropical cup with plenty of pineapple, grapefruit and orange.
